Seriously Zesty Lemon and lavender tart

Been meaning to try this out, but We Have The Builders In.... Very short sweet shortcrust pastry case (individual probably better than large) made with lavender sugar. Uncooked filling of sweet soft cheese slackened with whipped cream, lemon juice and zest. Depending on the cheese, it might need a little (plain) sugar in the mix. Maybe a drop or two of limoncello if we're allowed to be alcoholic ;) Topped with a little more lemon zest and shards of lavender sugar brittle.

What makes it the ultimate summer Seriously From Waitrose dessert?

Creamy, crunchy, sweet and tangy - yum!



  1. Commercial lavender sugar would probably need a brief blitz to make it fine enough for the pastry.
