Seriously Zesty Lemon Cheesecake

this is made with cottage cheese so weight watchers can have some without feeling too guilty!!?!

It is the best uncooked cheesecake I have ever tasted.


  • 6ozs crushed digestive biscuits, 3ozs butter for the base. 1lb cottage cheese, 4ozs caster sugar, juice of one lemon, 1/4oz powdered gelatine melted in a tablespoon warm water, 1 whipped egg white, 1/2 pint double cream.


  1. Make base in loose bottom flan dish. Sieve the cheese,beat in the sugar and lemon juice,beat in the gelatin, beat well.Fold in whipped cream and egg white, pour into prepared base. Leave in the fridge overnight.
