  • 3oz butter
    8ozs ginger biscuits
    2ozs soft brown sugar
    2 large eggs separated
    2ozs caster sugar
    1 sachet gelatine
    3 tbsps cold water
    8ozs full fat cream cheese
    150ml single cream
    150ml double cream
    juice and grated rind of a lemon


  1. line a deep 8" loose botomned cake tin melt butter,add sugar and crushed biscuits,cover base of tin with this mixture and put in fridge. beat egg yolks with caster sugar. sprinkle gelatineover water and melt over a pan of hot water. Add cheese to egg mixture,thenadd single cream.Pour in the gelatine.Whisk egg whites until stiff and fold into mixture Whip double cream until beginning to thicken,add to mixture. Add grated rind and lemon juice.Pour into tin and refrigerate.Top with fruit .
