This is a light, refreshing and uplifting dessert that is a perfect accompaniment to oily summer fish dishes such as mackerel or salmon, especially if BBQd. It brings together all that is british and the flavours of summer into a single simple dish that can be prepared in advance and will guarantee to delight guests.


  • Fresh local gooseberries, marscapone, lemon, butter, flour, cinnamon, caster sugar, demerara.


  1. Heat up and break down the gooseberries with a little water, sugar and cinnamon. Make a light crumble base with equal parts flour/sugar and half butter. Put the crumble in the moulds and top with the marscopone, sweetened to taste with caster and with some grated lemon zest. Then top with the gooseberry mix.
