Seriously Zesty Yummy Lemon Bars

This refreshing and light desert is a great way to end a heavy meal when you're still in the mood for something sweet!

What makes it the ultimate summer Seriously From Waitrose dessert?

Preheat oven to 185 degrees, and 165 for a convection oven. Mix ingredients for the base in a bowl until even and crumbly. Line the bottom of a well greased baking tray with the mixture and bake in the oven for 20minutes. Meanwhile, gently stir the ingredients for the topping together, taking care not to over mix. Pour over the cooked pastry and return to the oven for a further 20 minutes. Once out of the oven allow the lemon bars to cool. Once cooled sift the icing sugar over the top.

Ingredients

  • Base:
    1 cup of soft butter
    2 cups of flour
    1/2 cup of powdered/icing sugar
    1 tsp vanilla extract

    Topping:
    4 eggs
    2 cups of sugar
    1 tbs of lemon zest
    6 tsp of lemon juice

    About 2tbs icing sugar for decoration
