Sesame-roasted tofu & root vegetables

850g pack essential Waitrose Prepared Ready To Roast Vegetables
2 tbsp olive oil
1 tsp toasted sesame oil
2 tbsp Clearspring Organic Japanese Tamari Soya Sauce
1 tbsp fresh lime juice
1 tbsp sesame seeds
2 cloves garlic, crushed
½ tsp dried chilli flakes
1 tbsp clear honey
300g pack Clearspring Organic Tofu, drained and diced
2 salad onions, thinly sliced
1. Preheat the oven to 200°C, gas mark 6. Empty the vegetables into a large roasting tin or ovenproof dish and toss with the olive oil. Roast for 40 minutes until almost tender.
2. Meanwhile, in a shallow bowl, mix together the sesame oil, tamari soya sauce, lime juice, sesame seeds, garlic, chilli and honey until well blended. Add the tofu, turning to coat the cubes, then set aside to marinate.
3. Spoon the tofu and marinade over the roasting vegetables and return to the oven for 10 minutes until the vegetables are tender and nicely browned. Scatter over the salad onions and serve.
Cook’s tip
Use a roasting tin that’s large enough for the vegetables to sit in a single layer so they roast evenly and don’t steam in their own juices.
