Curry is a great way to use up whatever you have left in your fridge and with this easy recipe you’re never more than minutes away from getting started
Simple curry powder
3 tbsp coriander seeds
1½ tbsp cumin seeds
1½ tbsp black peppercorns
1 tbsp fennel seeds
1 tsp cloves
1 tsp fenugreek seeds
1 x 3cm cinnamon stick
1 star anise
Seeds from 15 green cardamom pods
1½ tbsp ground turmeric
Simply toast all the ingredients except the turmeric in a dry pan till aromatic. When cooled, blitz to a powder and add the turmeric. Use within a month.
