Simple pan-fried scallops

Serves: 2 as a starter

Ingredients

8 fresh king scallops, roe removed
1 tbsp olive oil
15g butter, cubed

Method

1. Toss the scallops in the oil and season.

2.  Heat a frying pan over a very high heat. Add the scallops and hold them in position – this helps them keep contact with the pan and holds their shape. Fry for 2 minutes, then turn and fry for a further minute.

3.  Add the butter. When it starts to foam, baste the scallops for a minute until golden.

4.  Drain on kitchen paper and serve.
