Smoked haddock & wild rice salad

Ingredients

260g pack Waitrose 1 Smoked Haddock Loins
220g pack Waitrose Middle Eastern Spiced Wild Rice Salad
150g baby plum tomatoes, halved
2 tbsp fat free natural yogurt
50g baby spinach or baby leaf salad
 

Method

1. Poach the haddock in boiling water for 8 minutes, drain and break into flakes.

2. Meanwhile, mix the rice salad with tomatoes and yogurt then stir in the fish, serve on a bed of spinach or leaves.
