Smoked salmon and chive omelette

3 essential Waitrose Eggs
1 tbsp essential Waitrose Reduced Fat Soft Cheese
1 tbsp chopped chives
2 tbsp essential Waitrose Semi Skimmed Milk
2 slices essential Waitrose Scottish Smoked Salmon, thinly sliced
½ tbsp oil
½ x 100g bag essential Waitrose Mixed Salad
1. Whisk the eggs, soft cheese, chives and milk together, stir in the salmon. Season with black pepper.
2. Heat the oil in a small non-stick frying pan and add the egg mixture. Cook gently for 2-3 minutes drawing the mixture from the sides to the middle of the pan occasionally.
3. Place under a preheated grill for 1-2 minutes until golden and set. Serve with the salad.
