Smoked salmon & avocado salad

2 essential Waitrose White Pittas, diced
2 tbsp olive oil
100g essential Waitrose Cucumber, diced
½ essential Waitrose Red Onion, sliced
1 essential Waitrose Avocado, diced
100g essential Waitrose Scottish Smoked Salmon, shredded
Juice ½ essential Waitrose Lemon
1. Preheat the oven to 200°C, gas mark 6. Place the diced pitta on a baking tray and toss in 1 tbsp oil. Bake for 7-8 minutes until golden.
2. Meanwhile, mix together the cucumber, red onion, avocado and salmon.
3. Whisk the remaining oil with the lemon juice and toss into the salad with the toasted pitta croutons.
