Smoked mackerel and apple salad

70g pack Waitrose peppery and aromatic wild rocket
3 essential Waitrose smoked mackerel fillets
¼ essential Waitrose cucumber, halved, deseeded and sliced
1 essential Waitrose pink lady apple, cored and sliced
50g essential Waitrose radishes, thinly sliced
25g walnut pieces
2 tbsp French dressing
1. Place the rocket on a large platter. Remove the skin and any bones from the mackerel, break into pieces and scatter over the rocket together with the cucumber, apple, radishes and walnuts.
2. Toss in the dressing to evenly coat. Serve straight away with crusty bread.
