smooth liver pate

simple pate


  • 225g liver
    50g bacon fat
    4 anchovy fillets
    1 small apple
    1 small onion
    1 clove garlic
    1tsp salt
    black pepper
    1 egg


  1. soak liver for 1/2 hour in wter and little vinegar.
  2. Mince and then liquidise with all the other ingredients
  3. Make a sauce out of 2 1/2 oz marg, 1oz flour, 1/4 pint of water. Add beaten egg add liver mixture.
  4. Pour into dish. Cover tightly and cook in water 50-60 minutes at 350F
  • Total time: 1 hour 45 minutes
