Soused dates in honey, rum and vanilla syrup

Serves: 4
175g medjool dates (about 9–10), stoned
5 tbsp light-flavoured honey, such as acacia
4 tbsp dark rum
1 vanilla pod, split open
1. Put all the ingredients in a small saucepan set over a low-medium heat. Simmer gently, stirring now and then, for 15-20 minutes, until the dates are sitting in a thick syrup. Set aside for 10 minutes before serving warm, or allow to cool completely. The dates will keep covered in the fridge for up to 1 week. Serve with vanilla ice cream or cream.
