using up Christmas tinned ingredients in a lovely soup
- Total time: 15 mins
tin or box of whole chestnuts, peeled and cooked
tin beef consommé
small tin sliced mushrooms in water
1oz garlic butter
a dash of liquid garlic to taste, also salt and peper
- put garlic butter in medium sized pan to melt, then add roughly chopped onion to melted butter and cook gently until onion is clear
- Add all the chestnuts and whole tin of consomme and slowly bring to simmer for 2 mins
- Take pan off stove and liquidize or use hand whizzer to make as smooth as you like, doesn't have to be perfect.
- Put pan back on, drain sliced mushrooms and add to liquid. season to taste. Serve with a little sherry, a whirl of cream and fresh home-made bread.
