75g essential Waitrose Easy Cook Long Grain Rice
1 fresh essential Waitrose Scottish Salmon Fillet
2cm piece fresh ginger, peeled and shredded
4 essential Waitrose Salad Onions, cut into 3cm pieces
1 tbsp dark soy sauce
1 essential Waitrose Little Gem Lettuce Heart, halved lengthways
1 tsp toasted sesame oil
1. Cook the rice in boiling water for 12-15 minutes or until tender, drain. Place the salmon, ginger and salad onions in a bowl and mix in the soy sauce, marinate for 2-3 minutes.
2. Transfer the salmon, ginger and onions to a steamer or a colander over a pan of simmering water, cover and steam for 5 minutes. Meanwhile, drizzle the gem lettuce with the oil and griddle for 1 minute, cut-side down until chargrilled.
3. Serve the lettuce topped with the salmon, vegetables and the cooked rice.
