Stir-fried red cabbage with walnuts and stilton

Ingredients

50g walnuts, roughly chopped
1 tsp walnut oil
1 tsp sunflower oil
½ red cabbage, cored and finely shredded
1 red onion, thinly sliced
2 tsp fresh thyme leaves
1 tbsp red wine vinegar
100g stilton, crumbled
maple syrup, for drizzling

Method

1. Toast the walnuts in a dry wok or frying pan for 3-4 minutes, then transfer to a small plate. Add both oils to the hot wok and stir-fry the cabbage and red onion for 5 minutes, until tender but still a little crisp.

2. Stir in the thyme, vinegar and toasted walnuts. Season, then transfer to serving plates. Scatter over the stilton and drizzle with the maple syrup. Serve immediately. SF
