    Stir-fried broccoli with garlic, ginger and chilli

    "A Chinese meal is rarely complete without fresh stir-fried greens, and the Chinese are masters at turning the healthiest veg into delicacies. Here, broccoli is tossed with aromatic seasonings, then served while it is still tender, bright green and slightly crisp."

    Serves: 4

    Ingredients

    350g broccoli
    1 tsp salt
    4 tbsp groundnut oil
    2 garlic cloves, peeled and finely sliced
    2cm fresh root ginger, peeled and finely sliced
    1-2 tsp chilli flakes (depending on how hot you want it)

    Method

    1. Cut the broccoli into small florets. Peel the stalk and cut into thick slices. Bring a large pan of water to the boil with the salt and 1 tbsp groundnut oil. Blanch the broccoli for 2-3 minutes; drain and set aside.

    2. Heat the remaining oil in a wok over a high flame. Swirl it around and add the garlic, ginger and chilli flakes, sizzling for 20-30 seconds until fragrant. Tip in the broccoli and stir-fry for about 1 minute until the florets are coated in the fragrant oil. Season and serve.
