Stir-fried broccoli with garlic, ginger and chilli

Serves: 4
350g broccoli
1 tsp salt
4 tbsp groundnut oil
2 garlic cloves, peeled and finely sliced
2cm fresh root ginger, peeled and finely sliced
1-2 tsp chilli flakes (depending on how hot you want it)
1. Cut the broccoli into small florets. Peel the stalk and cut into thick slices. Bring a large pan of water to the boil with the salt and 1 tbsp groundnut oil. Blanch the broccoli for 2-3 minutes; drain and set aside.
2. Heat the remaining oil in a wok over a high flame. Swirl it around and add the garlic, ginger and chilli flakes, sizzling for 20-30 seconds until fragrant. Tip in the broccoli and stir-fry for about 1 minute until the florets are coated in the fragrant oil. Season and serve.
