    Stir-Fried Chilli and Basil Squid with Spaghetti

    This tasty pasta dish is very simple to prepare and takes just a few minutes to cook. A great choice for midweek entertaining.

    • Total time: 16 minutes 20 minutes

    Serves: 4

    Ingredients

    • 2 cloves garlic
    • 500g Waitrose Fresh Egg Spaghetti
    • 300g squid, from the fish service counter
    • 3 tbsp olive oil
    • 2 red chillies, halved, deseeded and thinly sliced
    • 1 tsp white wine vinegar
    • 25g pack fresh basil

    Method

    1. Using a sharp knife, thinly slice the garlic. Cook the pasta in a large pan of boiling water according to pack instructions.
    2. Remove the tentacles from the squid and reserve. Slice the squid into rings. Heat the oil in a large frying pan. Add the garlic, chilli and squid including the tentacles and stir fry over a high heat for 3 minutes until the squid is cooked and white. Stir in the vinegar and season.
    3. Drain the pasta well and return to the pan. Roughly tear the basil leaves from their stalks then stir into the pan along with the squid. Toss well together and serve immediately.
