strawberry cake

8oz soft unsalted butter 4 free range eggs 8oz caster sugar squeeze lemon 8oz self raising flour clotted cream good quality strawberry jam/conserve ie duchy range/bon maman/wilkins/waitrose own english or belgian strawberries soaked in cassis liquer cream sugar butter till light and fluffy put oven on 170oc add eggs beaten and flour very slowly using metal spoon, squeeze leon or drop vanilla essence put in greased/floured cake tin use spoon of plain flour put in heated oven 45 mins approx sandwich with good jam/strawberries hulled and sliced clotted cream or double cream whipped or mascapone top use icing sugar/ more fruit on topsprig of mint/other fruit, or butter icing made with softened butter about 50g and icing sugar/teaspoon milk or single cream enjoy will serve 8 easily
