Stuffed aubergines

Easy and delicious recipe.


  • - 2 aubergines
    - packet of mozarella
    - onion
    - streaky bacon


  1. Slice slits into each aubergine, roughly 1.5cm apart, taking care not to cut all the way therough. Place in a baking dish and stuff the slits alternately with slices of cheese, slices of onion and slices of bacon. Bake for 45mins in a preheated oven at 180C until the aubergine is soft and the bacon is crisp.
