Summer chicken traybake

75g orzo pasta
250ml chicken stock
2 tbsp red pesto
3 plum tomatoes, halved
1 courgette, thickly sliced diagonally
1 red pepper, sliced into 8
135g pack Waitrose 1 Baby Leeks, trimmed and cut into 4
350g pack essential Waitrose British Chicken Mini Breast Fillets
1 Preheat oven to 200°C, gas mark 6. Place the orzo in a large roasting tin.
2 Blend the chicken stock and pesto together, and pour into the roasting tin. Add the remaining ingredients and season.
3 Roast for 25 minutes until the chicken is cooked throughout and there is no pink meat. Garnish with basil.
