Sweet and sour red cabbage

Serves: 8
1 tbsp olive oil
2 garlic cloves, finely chopped
2 red onions, finely sliced
1 red cabbage, shredded, and core discarded
150ml balsamic vinegar
100g light brown soft sugar
1. Heat the oil in a large saucepan over a medium heat. Add the garlic, onion and cabbage and cook for 5 minutes, until starting to soften. Stir in the vinegar and the sugar, turn down the heat, cover and cook gently for 30 minutes.
2.Remove the lid, turn up the heat to high and cook for another 5 minutes, stirring continuously, until most of the liquid has evaporated and the cabbage is sticky. Season and serve (or refrigerate overnight and reheat the next day before serving).
