Sweet Potato and Vegetable Curry
- Total time: 40 mins
1 clove garlic
2.5cm/1 in root ginger
1 tbsp olive oil
1 rounded tbsp medium curry paste
400g can chopped tomatoes
4 med sweet potatoes
100g trimmed fine beans
- Finely chop the onion. Peel and crush the garlic. Peel and finely grate the ginger.
- Heat the oil, add the onion, curry paste, garlic and ginger. Cook over a gentle heat until softened. Add the chopped tomatoes and 150ml (5fl oz) water.
- Peel the sweet potato and cut into large cubes. Add to the sauce then cover and simmer for 15 mins. Break the cauliflower into florets, add with the beans (add more water if necessary). Continue to cook for a further 15 mins.
