    The Essential Club Sandwich

    Ingredients

    • 2 essential Waitrose, thinly sliced
    • 3 rashers essential Waitrose Unsmoked Thin-Cut English Bacon
    • 1 large essential Waitrose Chicken Breast
    • 6 slices essential Waitrose Medium Sliced Wholemeal Bread
    • 3 tbsp Waitrose Half-Fat Mayonnaise
    • 1 tsp Waitrose English Mustard, or to taste
    • 4 essential Waitrose Iceberg Lettuce leaves, washed and torn into large pieces

    Method

    1. Preheat the grill to its highest setting. Warm a large non-stick frying pan over a high heat. Add the bacon to the dry pan and fry for 1-2 minutes on each side, or until opaque and beginning to colour. Roughly chop, then set aside in a warm place on a plate lined with kitchen paper.
    2. Lay the chicken breast out flat on a board. Using a sharp knife, cut the breast horizontally into 4 thin slices. Season each slice then add to the hot pan. Cook for 2-3 minutes on each side or until golden, there is no more pink meat and the juices run clear. Set aside with the bacon.
    3. Toast the bread under the grill for 2-3 minutes on each side, or until golden. Meanwhile, mix the mayonnaise and mustard together.
    4. Spread two slices of toast with mayo and top each slice with a quarter of the bacon, chicken, lettuce and tomatoes. Top with another slice of toast and repeat the process again. Spread the last slices of toast with the remaining mayo and place, mayo side down, onto the sandwich. Using a serrated bread knife, cut each sandwich into quarters, skewer each quarter with a cocktail stick and serve.
