Tortilla pizza with courgettes, olives and mozzarella

½ red onion
2 essential Waitrose courgettes, coarsely grated
1 tbsp olive oil
pinch chilli flakes (optional)
4 flour tortillas, about 20cm diameter
2 x 125g essential Waitrose Italian mozzarella, sliced
50g sliced black olives
1. Preheat the oven to 220°C, gas mark 8 and put 2 large baking trays in to heat up.
2. Slice the onion as fi nely as you can and combine with the courgette, olive oil and chilli flakes, if using. Season and divide the mixture evenly between the tortillas. Top with the mozzarella and olives.
3. Put the tortilla pizzas on the preheated trays and cook for 6-7 minutes.
