Västerbottensostis a delicious hard cows’ milk cheese from northern Sweden with a similar flavour to mature cheddar.
Västerbottensost cheese with walnuts and honey open sandwich

50g västerbottensost cheese, coarsely grated
1½ tbsp Philadelphia soft cheese
1½ tbsp crème fraîche
4 rye crispbreads
handful walnut pieces, toasted
2 tsp honey
1. Mix the västerbottensost with the soft cheese and crème fraîche, season and pile onto the crispbread. Top with walnut pieces and a drizzle of honey, or a spoonful of blueberry preserve, if liked.
