Vegetable Bean Crumble

Ingredients

400g Cooks' Ingredients Vegetables and Mixed Beans
100g Cooks' Ingredients Breadcrumbs
50g Melted Butter
100g grated Village Green Goats Cheese
2 tbsp fresh mixed herbs
Green beans

Method

1. Preheat the oven to 200°C, gas mark 6. Place 400g pack Cooks’ Ingredients Vegetables and Mixed Beans (find in the chiller), into an ovenproof dish and put in the oven for 10 minutes.

2. Mix together 100g Cooks’ Ingredients Breadcrumbs, 50g melted butter, 100g grated Village Green Goats Cheese, and 2 tbsp fresh mixed herbs (try parsley, chives and coriander). Stir 2–3 tbsp boiling water into the vegetable and bean mix before scattering the crumb mix over, then bake for a further 15 minutes until golden and crunchy. Serve with steamed green beans.
