Warm tomato & mango salsa

Serves: 2 - 4
15g butter
1 red onion, diced
2cm piece root ginger, peeled and grated
1 Waitrose Perfectly Ripe Mango
200g Red Choice tomatoes, chopped
1. Melt the butter in a small frying pan and gently cook the red onion with the ginger for 2 - 3 minutes until beginning to soften.
2. Meanwhile, peel the mango, remove the stone and dice the flesh. Add the mango and chopped tomatoes to the onion mixture and cook gently for 7 - 8 minutes, until reduced. Serve warm, spooned over seared tuna with a rocket salad on the side.
For an added kick, stir some sweet chilli sauce into the salsa before serving.
