wedding salmon(stuffed)

This is a gorgeous recipe I have done for over 300 weddings as a chef delici I cook for 3-4 weddings a week. Any ideas I use are all on this site. Just place a search for wedding.

Ingredients

  • 1 whole salmon scaled.
    3 tablespoons pesto.
    2 tablespoons creme fraiche.
    10g fresh basil.
    watercress to serve

Method

  1. Cut the salmon so a hinge is made. Place all ingrediants in a food processor and pour into centre of salmon. Secure sides with cocktail sticks. bake 40 mins if frozen 20 mins if not.
  • Total time: 60 mins max
