Wheat-free cakes

Replace the flour with gluten-free self-raising - both Doves Farm and Orgran give very good results.. I use standard recipes, adding an extra egg to the mix and extra baking powder (gluten-free). Sponges and plain cakes are very successful, but fruit cakes don't work so well as the fruit tends to sink .
