This is really quick and easy to make and its sharpness cuts through rich food beautifully. It adds a bit of glamour when serving cold meats and ham, plus it makes a stylish side to roast meats.

Ingredients

  • 1 medium celeriac, grated
  • ½ lemon, juice, plus extra to taste
  • 4 tbsp mayonnaise
  • 4 tbsp creme fraiche
  • 2 tbsp Dijon mustard (or other mustard)
  • 1 tbsp capers, drained
  • serrano ham, to serve (optional)
  • crusty bread to serve (optional)

Method

  1. Put the grated celeriac in a bowl with the lemon juice and a generous sprinkling of salt. Leave to sit for 20 minutes.

  2. Meanwhile, mix the mayonnaise, crème fraîche and mustard in a large bowl. Squeeze out any excess water from the celeriac with your hands. Add the celeriac to the dressing and mix until combined. Season, adding more lemon juice if needed. Scatter with the capers and serve with serrano ham and crusty bread, if liked.
