Ive just retired and Im loving the opportunity to spend time cooking and entertaining my friends. My retirement gift was a Kitchen Aid mixer and I'm using it to improve my baking skills. I learned all the basics from my Mum ...and Delia ! I like to experiment and try new dishes buit one that I often come back to is my King Prawn Fusion Risotto flovoured with lemongrass , coconut milk , ginger , chilli and coriander.

    The icing sugar works really well in this recipe making the pastry sweet and crisp - my friends LOVE it.
