  • Lamb tagine

    I make the quick version with the recipe from the jar. Trim and cube 2 lamb steaks, and marinate in 6 tsp Ras el Hanout spice mix, 1 tbsp olive oil and 2 tbsp honey for an hour or more. Brown the lamb. Add 100g chopped dried apricots & 125g halved baby plum tomatoes. Season and cook for 10-15 minutes. Eat with couscous with roasted flaked almonds and sultanas.

    This was excellent and very tasty. Used 1kg of chuck steak and less wine but kept the bacon/veg quantities the same. Used 50g of drained anchovy from a jar and it was a bit salty at the end, so added a few carrots to soak up the salt and cooked it a bit longer. Definitely doesn't need any salt in the seasoning. Cooked the mushrooms in the stew rather than doing the extra frying ...

  • Honey Chicken Pan-Fry with Lemon and Sweet Potato

    I made this again but used a wok rather than a frying pan - this dealt with the soft potato problem. Again I used lemon zest/pulp/juice rather than pith with an excellent tangy result.
