With its fuchsia-pink skin and scales, the dragon fruit is in fact a cactus fruit and so unlike any other fruit in appearance. Cut in half to reveal the opaque white or purple flesh dotted with small black seeds. The skin isn't edible.
Seasonal availability: All year.
Uses: Scoop out the sweet flesh and serve it with mango or tropical sorbet or on its own.
To store: Store at room temperature.
To prepare: Cut the fruit in half around the middle and scoop out the flesh with a teaspoon. Or to serve it in slices, cut the fruit into slices then remove the skin from each slice.
