How to segment an orange

Juicy winter oranges are wonderful in salads and desserts, or with rich meats such as duck. Segmenting removes all of the bitter white pith, and you can use this technique for grapefruits, too.

Orange step 1
1. Using a sharp knife, carefully slice off the top and bottom of the orange.

2. Using even downward strokes, slice the skin away from the flesh and discard.
Orange step 3
3. Remove any remaining white pith.
Orange step 4
4. Cut between the membranes to segment the orange, reserving any juices.
