Perfect coffee


Follow the steps below for perfect filter and cafetière coffee.

Filter coffee

1. Boil some freshly drawn water (preferably filtered if you live in a hard-water area), then rest it for a few seconds. Good coffee needs water that is just off the boil - if it's too hot it scalds the coffee and gives a bitter taste.
2. Measure the ground coffee into the filter. The normal amount is one level tablespoon per mug (makes about 200ml coffee), but adjust the amount according to your personal preference.
3. Pour some of the boiled water onto the grounds - they will swell up slightly, which helps the flavours to develop. Pour on the rest of the water and leave to drip through.
4. Drink the coffee soon after making to enjoy it at its best. Do not leave it to stand on a hot plate as too much heat will ruin its flavour.

Cafetière Coffee

1. Boil some freshly drawn water (preferably filtered if you live in a hard-water area). Pour a little of the water into the cafetière, swirl it around to preheat the pot, then discard. Let the rest of the water rest for a few seconds. Boiling water will spoil the flavour.
2. Add ground coffee to the cafetiere - about one level tablespoon for each mug (makes about 200ml of coffee), but adjust according to your taste.
3. Pour in the hot water, then stir. Set the plunger in place, but do not push it down yet.
4. Leave for four minutes. Then depress the plunger and serve. Drink the coffee within 15 minutes to enjoy the aroma and flavour at their best.
