1Line Caught Yellowfin Tuna Steaks

Waitrose firm meaty yellowfin tuna steaks are skinless and boneless. They are line-caught from the Indian and Pacific oceans and are dolphin friendly and naturally high in Omega 3.

The deep crimson flesh responds well to being griddled or pan fried, just seared on the outside to preserve its moistness and flavour - a steak of about 175g is suitable for a single serving.

2Wild Alaskan Salmon Fillet

A magnificent fish highly prized for its sweet flavour and tender, naturally brightly coloured flesh that needs only the lightest cooking to enjoy at its best. Caught in Alaska's well managed, sustainable fishery certified to Marine Stewardship Council standards.

When buying salmon fillets allow around 200g per person.

3Line Caught Icelandic Cod Fillet

Sourced from well-managed fisheries in Iceland, Waitrose cod is a meaty fish with very few bones.

When buying cod fillet allow 125 to 200g per portion.

Cod fillets can be baked, fried or poached. Traditional accompaniments to cod include parsley sauce and lemon wedges.

4Select Farm Salmon Fillet Portions

Waitrose salmon fillets are from dedicated farms in locations carefully chosen for their highly oxygenated, fast flowing tidal waters.

The salmon are reared to the highest welfare standards with care for the environment. Skinless and boneless, salmon is naturally high in Omega 3 - allow around 200g per person.

5Fresh Scottish Mussels

Waitrose sweet, grit-free Scottish mussels are reared naturally on ropes in sheltered sea lochs on the west coast of Scotland.

Store mussels in the fridge in a bowl covered with a damp cloth - not in fresh water or they will die.

Remove barnacles and beards before cooking, discarding any which are broken, cracked or have shells that do not close when tapped firmly. Steam the live mussels for 5 minutes and discard any that have not opened. Allow 500g of shells per person.

6Greek Sea Bass Fillets

Waitrose sell selected boneless fillets of sea bass, from fish farmed in the warm waters of the Mediterranean.

The skin has been left on to protect the flesh during cooking, making them ideal for grilling or pan frying.

Particularly good with strong flavours and piquant sauces, allow about 200g per serving.

7North Atlantic Cooked Prawns

Cold water prawns, tender and sweet are caught in the well managed sustainable North Atlantic fisheries.

Ready to eat in salads, sandwiches and wraps, you can also use in starters or add to hot dishes at the very last minute.

Waitrose salmon is sourced from selected farms in locations carefully chosen for their highly oxygenated, fast flowing tidal waters.

The salmon are reared to the highest welfare standards with care for the environment. If you buy a whole salmon allow about 350 to 400g per serving. When your recipe calls for use of a fish kettle, you can borrow one free from your local Waitrose.

9South African Hake Fillets

Succulent and moist, hake is prized for its delicately flavoured, flaky flesh. Caught in the well managed and sustainable South African fishery, certified to Marine Stewardship Council standards.

Hake is particularly good baked or cooked 'en papillotte'. Substitute hoke for hake in the following recipes.

10Line Caught Icelandic Prime Cod Fillet

Line caught from well-managed and sustainable fisheries in Iceland, Waitrose prime cod fillets are specially selected from succulent cod and is skinless and boneless.

Allow 125 to 200g per portion.

A highly versatile fish, that can be partnered with a wide range of flavours and sauces and is best lightly cooked.

11Scottish Oysters

Waitrose rock oysters are reared in sea lochs off the Scottish coast.

For a starter, allow 2-3 oysters per person.

There is a knack to opening oysters which is best using a shucking knife. These are available from your Waitrose fish counter.

To serve naturally, serve them in the half shell with nothing more than a splash of lemon juice and a fresh grinding of black pepper.

12Scottish Organic Whole Salmon

Waitrose salmon is sourced from dedicated farms in locations carefully chosen for their highly oxygenated, fast flowing tidal waters.

The salmon are reared to the highest welfare standards with care for the environment. Organic Scottish salmon is certified by The Soil Association - if you buy a whole salmon allow about 350 to 400g per serving. When your recipe calls for use of a fish kettle, you can borrow one free from your local Waitrose.

13Plaice Fillets

Plaice is a classic favourite with a delicate flavour and tender, fine texture.

Caught from sustainable stocks, allow a whole 350-450g fish or a 175g fillet per person.

Plaice is very versatile but is at its very best lightly poached, steamed or baked.

14Madagascan Tiger Prawns

These generously sized, firm whole tiger prawns are from selected farms in the Mahajanga estuary of Madagascar, which work to high standards of care for the local community, wildlife and environment.

Sweet and succulent, these prawns are perfect in stir fries and once cooked are great in salads and starters.

15Traditionally Smoked Line Caught Icelandic Prime Cod Fillet

Waitrose smoked cod is line caught from Iceland's well managed and sustainable fishery.

The fillets are smoked for 10-12 hours over smouldering oak and beech chippings.

Smoked cod can be cooked in a variety of ways but is delicious with creamy sauces or in fish pies.

16Ray Wings

Because of concerns over declining stocks of Atlantic skate, the wings sold in Waitrose are from the various rays.

Once cooked the pinkish-white flesh has a moist meaty texture and a good flavour.

Ray wings can be poached or grilled, the cooked flesh can also be included in soups, mousses and stews.

17Line Caught Pacific Halibut Steaks

A fish prized for its creamy white, firm meaty flesh, halibut steaks are excellent gently pan fried or poached in a good fish stock or a light white wine.

Prepared by hand and ready to cook, Waitrose halibut is line caught from the well managed and sustainable fisheries of Alaska, certified to Marine Stewardship Council standards.

When buying steaks and fillets allow about 200g per person.

18Lemon Sole Fillets

Waitrose lemon sole fillets come from the sustainable, well managed fisheries of the Faroe Islands and Iceland.

Lemon sole is highly valued for its delicate, pure white flesh, and is especially delicious complemented by classic white wine sauces.

Allow one lemon sole fillet per person.

19Squid

Also known as calamari, squid has a subtle flavour with a slightly chewy texture. The pouch, tentacles, fins and ink are all edible.

When left whole the pouch is ideal for stuffing.

Calamari rings and whole squid are available from Waitrose Fish counters.

20French Carp

Waitrose Carp is sourced from lakes near Lyon in the South of France and is available up to 3kg in weight.

It is available in selected Waitrose branches only. Allow 300g of fish per person. This stuffing recipe for trout, is equally good with carp.

21Traditionally smoked line caught Icelandic Haddock Fillet

Line caught from Iceland's well managed and sustainable fishery.

Waitrose haddock is smoked in the traditional way in brick built chimneys over gently smouldering oak and beech chippings. Its flaky flesh has a distinctive flavour and soft texture and can be cooked in the same way as cod.

22English Estate Rainbow Trout Fillet

Farmed to Soil Association standards on the Earl of Radnor's Longford Estate, these trout swim freely in gravel ponds fed by the flowing waters of the Hampshire Avon.

The firm pink flesh has a subtle, delicate flavour and is naturally high in Omega 3.

Waitrose also sell organic english estate brown trout.

23Lightly Smoked Select Farm Salmon Fillet Portions

Waitrose salmon fillets are from dedicated farms in locations carefully chosen for their highly oxygenated, fast flowing tidal waters.

The salmon are reared to the highest welfare standards with care for the environment. Handcured and boneless, the fillets are lightly smoked over oak chippings, ready to cook.

Salmon is naturally high in Omega 3 - allow around 200g per person.

24Greek Gilthead Bream

Waitrose sells farm reared gilthead bream from Greece. It has a firm textured flesh with a delicate flavour.

A whole gilthead bream usually measures about 20cm and weighs 450g which would serve 2 people.

Red snapper or sea bass can be used instead of gilthead bream.
