Waitrose Select Farm Salmon is reared in the cold, clear, fast-flowing waters around the Orkney and Shetland Islands on specialist fish farms, carefully chosen to minimise the impact on the marine environment and is probably the 'wildest' farmed salmon you can buy. The latest technology ensures consistent care for the fish and their surroundings, and all our salmon can be traced back to the farm where they were reared. Salmon thrive in highly oxygenated, fast–flowing currents, and the deep tidal waters around the Orkney and Shetland Islands are perfect for producing fish in peak condition. The result is lean, well-flavoured salmon farmed to the highest standards of welfare and certified by the Soil Association.
Smoked salmon
No other supermarket has a wider range of smoked salmon.
Our Speyside salmon is carefully selected to guarantee only the best salmon reaches the smokehouse. Once there the salmon is smoked traditionally over chippings from old whisky barrels, which gives it its unique flavour and a firm yet delicate texture that isn't too oily. The Granton on Spey smokehouse uses traditional methods throughout the smoking process. The fish are split and hand sprinkled with a mixture of salt and sugar and left to absorb this mixture for several hours before being rinsed. The fish are then hung from pegs and smoked in the kiln using the traditional hanging method. This allows the smoke to circulate more freely around the salmon and the salmon’s natural oils to run through the fish resulting in a slightly drier, non-oily texture. Smoking takes 24 hours, giving the salmon a smokier than usual taste.
The healthy option
Like all oily fish, salmon is a good source of protein and is rich in Omega 3 fats. These fats may help to maintain a healthy heart, when they are eaten as part of a healthy, balanced diet. Try to include at least two portions of fish every week, one of which should be oily.
