Sea Bass & Sauvignon Blanc

Fish breaks up when stored laying in its own juices. If you’ve bought your bass a day or so before you’ll use it, rinse it under cold water before storing it. Placing the fillets on a cake rack before you cover them will keep them fresh and intact.
