What's special about Waitrose sausages?
A sausage is only as good as the meat that goes into it, and our sausages are made from the same pigs that provide our fresh pork. They’re reared on British farms, by a dedicated group of farmers, who we know personally. All the pork can be traced back to the group of farms where it was raised.
Waitrose standard sausages
Sold both prepacked and from the service counter, these include pork and pork and beef sausages, pork chipolatas and cocktail sausages. They’re made from our British pork, which comes from pigs that are born outside, and reared in light, airy sheds, with straw to sleep on, and room to express their natural behaviour.
Parchment range sausages
These are made from high quality, selected cuts of coarse-cut British pork shoulder ansd belly, in a range of recipes, including regional specialities such as Cumberland pork chipolatas and Lincolnshire pork sausages. They’re sold prepacked, wrapped in parchment paper.
Speciality sausages
Made with selected cuts of shoulder and belly of British pork, our speciality sausages are seasoned with high quality herbs and spices. They’re sold prepacked in black trays.
Free range pork sausages
These are made from our free range English reared pigs sired by Hampshire boars, using only selected cuts of shoulder and belly. Hampshire Breed is a traditional breed, renowned for tenderness and flavour. It’s reared for us on three farms, where the pigs roam freely outside. Coarsely chopped and mixed with spices, it makes tasty, succulent sausages, sold prepacked with the speciality sausages.
Organic sausages
Our organic sausages are made from pork reared on organic farms in Norfolk and Lincolnshire. The pigs roam freely outdoors, and are fed an organic, cereal-based diet.
How do you look after animal welfare?
All our pork is reared under the Assured British Pig Scheme, which sets high standards of animal welfare, and audits farms regularly. The pigs are only transported by hauliers approved by Assured British Pigs, and journeys may not last longer than four hours. On arrival, the pigs are inspected and given rest and fresh water.

Roger Newton is one of the farmers who supplies pork for our free range sausages, from his Norfolk herd of Hampshire Breed pigs.
Rearing the pigs outside with lots of space to forage means the meat becomes very flavoursome.

Waitrose Organic Pork Sausages come from pigs that are reared on organic land and fed an organic diet. Bring out their flavour by serving them with this delicious relish, which is also made from organic ingredients. Eat with bread or creamy mashed potatoes. During May you will also find some unusual sausages in our sausage fair on the meat service counter.
