What's special about Waitrose eggs?

All our eggs are free range, from carefully selected British farms. Our standard eggs and organic eggs all come from Columbian blacktail hens, a hardy breed that thrives in the British climate. They're reared by farmers in the Columbian Blacktail Guild Assurance Scheme, a partnership between Waitrose and the farmers. It ensures the highest quality, safety, welfare and environmental standards, along with a fair deal for farmers.

In line with other responsible retailers, when our free-range hens come to the end of their lives, their meat goes into the food supply chain, as has been the case for many years. Under our strict animal health policy, our farmers do not offer birds for re-homing as it is vital that the industry as a whole maintains the traceability of flocks at all times.

Free range Columbian blacktail eggs

These come from chickens which are free to roam from dawn to dusk, with access to food, drink and shelter when they want them. At night, they're housed safely in purpose-built henhouses, often powered by wind and solar energy. Their eggs are laid in quiet, comfortable nestboxes, and collected by the farmers each day.

Free range organic Columbian blacktail eggs

The chickens that lay our organic eggs are reared to Soil Association standards. These standards require the very highest levels of farm management and welfare, and Waitrose is the only major retailer to meet them.

Clarence Court speciality eggs

Clarence Court Free Range Eggs are special, for their superior flavour and quality, as well as the care and attention given by the poulterers to the health and welfare of their hens. Free to range and forage on green pasture from dawn to dusk, they lead a natural and happy life.

The birds enjoy the finest cereal based diet with a generous helping of sun drenched maize, the privacy of warm secluded nest boxes, dust baths, trees and shrubs for cover - in fact everything that every healthy hen requires for its freedom of expression and fullness of life to lay a truly Free Range Farm Fresh Egg.

Cotswold Legbar eggs have pastel-coloured shells, in shades of blue, pink and peach, large yolks and a rich flavour that makes them especially good for baking. Burford Brown eggs have a thick, brown shell, dense texture and large, deep yellow yolk.

<p> Homemade scotch eggs are gorgeous, and I can't think of many portable foods better than these. Use the best organic free-range eggs and the finest sausagemeat and you can't go wrong. The water added to some meat can evaporate during cooking - so if you've used the best, the eggs won't rattle around inside the sausagemeat.</p>

What kinds of eggs does Waitrose sell?

You'll also find quail and duck eggs at Waitrose, and selected branches also sell pheasant and goose eggs when in season. Some branches also offer double-yolked eggs.
