Day two

Grill Craster kippers with seven cherry tomatoes and serve with hot, buttered wholemeal toast.

Pile baby corn and cucumber strips onto half a nori seaweed sheet, drizzle with sweet chilli sauce and roll up for a sushi-style snack.

Blitz cooked beetroot with Greek yogurt, salad onions and cumin seeds. Serve as a dip.

Roast peeled, cubed squash until tender, adding pine nuts 5 minutes before the end of cooking time. Mix with pasta and half-fat crème fraîche.

Add chopped stem ginger with a splash of its syrup to kiwi pieces and seedless white grapes.
