Day one

Peel and roughly chop half a grapefruit and sprinkle with vanilla sugar for a zingy breakfast.

Halve a ripe avocado, slice and drizzle with balsamic vinegar for an energy-fuelled snack.

To make a refreshing summer salad, cut a slice of watermelon into chunks then mix with feta, cucumber, olives and mint.

Add peeled and grated raw beetroot to chopped orange segments, shallots and parsley for a great salsa. Serve with fish or chicken.

Poach a handful of halved, stoned apricots in orange juice until tender. Serve with ice cream.
