A member of the cabbage family, Brussels sprouts have a distinctive flavour and texture, they are most popular at Christmas where they are served as an accompaniment to roast turkey. Smaller, greener sprouts have the sweetest taste. Waitrose sell loose Brussels sprouts, packs of ready trimmed sprouts (330g) and 500g packs of sprouts. Available in winter and spring.
Uses: As an accompanying vegetable.
To store: Keep in a cool, dark place for 2-3 days.
To prepare: Wash the sprouts thoroughly in cold water and trim off any damaged outer leaves and the stem. Using a small sharp knife, cut a cross in the base of each sprout - this ensures the thick stems cook at the same rate as the leaves.
To cook: Cook in boiling salted water for 10 to 15 minutes or steam for 15-20 minutes until just tender. Overcooked sprouts have a very unpleasant taste and smell. Drain well, using the back of a spoon to press out any excess liquid.
