‘Not only do root vegetables add colour to any dish, they provide a variety of different vitamins, minerals and fibre too. Beetroot, celeriac and parsnips provide you with folate, a B-vitamin which helps to reduce tiredness.  Carrots are rich in vitamin A, which supports healthy skin and actually cooking them with a little vegetable  oil helps our bodies to absorb it.’
