    All-in-One Turkey Roast

    Serves: 4

    Ingredients

    • 500g carrots
    • 3 parsnips
    • 1kg floury potatoes
    • 2 tbsp olive oil
    • 500g Waitrose Fresh British Turkey Butter Basted Breast Joint
    • 450g pack Waitrose Apricot and Almond Sausagemeat Stuffing
    • Rashers of streaky bacon
    • Gravy, to serve

    Method

    1. Peel and cut 500g carrots and 3 parsnips into thick sticks. Peel and cut 1kg floury potatoes into chunks. Mix vegetables in a large roasting tin and coat in 2 tbsp olive oil, seasoning well. Place a 500g Waitrose Fresh British Turkey Butter Basted Breast Joint in the middle and roast at 190°C, gas mark 5, for 1 hour.
    2. Meanwhile, shape a 450g pack Waitrose Apricot and Almond Sausagemeat Stuffing into 8 balls, wrapping each in a rasher of streaky bacon. After 30 minutes into the roasting time, add the stuffing balls to the tin and cook until meat and vegetables are tender. Allow to stand for 5-10 minutes. Serve with gravy.
