    Almond Biscuits

    • Preparation time: 15 minutes, plus 7-8 hours drying
    • Cooking time: 10 minutes, plus cooling
    • Total time: 25 minutes, plus 7-8 hours drying

    Makes: 12


    • 1 medium egg white
    • 50g caster sugar
    • Almond essence, to taste
    • Pinch of salt
    • 100g ground almonds
    • Icing sugar
    • A few flaked almonds (optional)


    1. Line a baking sheet with greaseproof paper.
    2. Whisk the egg white to stiff peaks. Gradually add the sugar, whisking, until the mix is thick and glossy. Fold in the almond essence, salt and ground almonds to form a paste.
    3. Dip your hands in icing sugar. With your hands, roll the paste into walnut-sized balls. Put on the baking sheet and gently flatten. Leave to dry for 7-8 hours.
    4. Preheat the oven to 140°C, gas mark 1. Top the biscuits with flaked almonds, if you like. Bake for 10 minutes or until slightly cracked. Cool and serve.
