    Almond Curls

    Serves: 16


    • 40g butter
    • 40g caster sugar
    • 25g plain flour
    • 40g flaked almonds


    1. Preheat the oven to 200°C, gas mark 6.
    2. Beat the butter with the sugar until pale and fluffy, then work in the flour and almonds. Place 4 separate teaspoons of the mixture well apart on a greased baking sheet. Flatten with a wet palette knife, and cook for 6-8 minutes until golden. Leave to rest for 1 minute then carefully lift off with a palette knife and lay over a rolling pin to curl. Leave until set, then remove. Repeat with the remaining mixture four times.
