    Anchovy Butter Sandwiches

    Makes: Makes enough filling for four sandwiches

    Ingredients

    • 10 anchovy fillets in oil, drained
    • 80g unsalted butter, softened
    • Pinch freshly grated nutmeg
    • Freshly ground black pepper
    • 1 tbsp lemon juice (optional)

    Method

    1. In a pestle and mortar, pound the anchovies to a thick paste. Add the other ingredients and season with lemon juice if desired.
